Lemon Garlic Kale Salad

This recipe holds a very special place in my heart and let me tell you why. I really wanted to expand my salad repertoire and because I had never used kale before, I wanted to start there. I googled a couple recipes and nothing really wowed me, but then I got the idea of mixing the elements of a couple different recipes that sounded good to me and seeing what would come out of that. I love very citrus-forward and garlic-y foods, so putting this together was kind of a no-brainer for me.

So, after experimenting a bit, I came up with this! I have made it for friends on several occasions and it’s been a hit every single time. I think what makes it so good is the simplicity of it and the use of bold flavors. This recipe makes enough for one entree sized salad, or two side salads. I actually have been wanting to put up this recipe for ages, but I kept putting it off because I didn’t know how to accurately measure out everything since this is so second hand to me at this point. My Favorite Open Faced Sandwich

This recipe idea came to me all because of one ingredient – my favorite chipotle lime mayo. It’s by the brand Primal Kitchen and oh my is it delicious. You can get this at Whole Foods, Kroger, Target, etc. It’s approximately $8 for a jar, which is steep for a mayo, but I’m telling you…it’s worth it.

All you need is:

  • bread (whole grain preferably)
  • chipotle lime mayo
  • arugula
  • 1-2 eggs
  • seasoning (salt, pepper, crushed red pepper, etc.)

Wabi House

Wabi House in Lower Greenville is hands down my favorite ramen place in Dallas. They have one vegetarian ramen dish and it is good.

The veggie ramen consists of noodles, enoki and shiitake mushrooms, snap peas, bok choy, corn, scallion, bamboo shoots and mayu oil. I always like the veggies that come with any ramen bowl but what really needs to be on point is the broth. I love their broth. It has a great earth-y flavor to it and is seasoned perfectly. I like to add an egg on top because I love the flavor of a nice, runny yolk mixed in with the broth.

Chronicles of a Vegetarian

To my fellow vegetarians, I wanted to dedicate a space on my blog to discuss restaurants that I love. Whether they have a lot of vegetarian options or just a single standout dish, I want to share my dining experiences with y’all!

One of the most annoying things about being someone who loves to try new restaurants and foods is that oftentimes there are very few or even zero options for those that have dietary restrictions. I really appreciate the places that have good options and not just the standard salad. I also love substituting items so I will also discuss that when those situations come up.
